Most apple cider vinegar on the market is made to a formula. This one is made by accident, in the best possible sense.

Big Nose and Beardy produce cider in Sussex from local apples that would otherwise go to waste — sourced from private gardens and orchards, hand-picked with the help of volunteers. Some batches are allowed to ferment wild and spontaneously, then matured for at least a year as cider. When oxygen reaches a batch and it begins to turn, rather than treating that as a loss, it is welcomed: the cider continues maturing for at least another year until it becomes vinegar. The whole process, from apple to bottle, takes a minimum of two years.

The result is unpasteurised and unfiltered, which means it still contains 'the mother' — the wispy, cloudy strands that indicate live cultures and are typically removed in commercial production. It is packed with flavour in a way that most supermarket ACV simply is not.

The bottle has recently moved from 250ml to 500ml, which makes the price per use considerably more reasonable for anyone taking it daily.

On the health side: the brand is honest about what is and is not known. Research published in peer-reviewed literature suggests favourable effects of ACV consumption on fasting plasma glucose and blood lipid levels. Beyond that, anecdote varies — Bignose himself takes it with honey from his own bees and credits it with easing his arthritic knees. Others use it for its flavour alone. Both are valid reasons to have a bottle in the kitchen.

How to use: Gently shake before serving. Dilute 30ml in 200ml of still or sparkling water and sweeten to taste, enjoyed as a tonic. Also suitable for dressings, sauces, and cocktails.
