Most sauerkraut you find in a supermarket has been pasteurised — heated to extend shelf life, which also kills the live bacteria that make fermented food worth eating in the first place. Loving Foods does not do that. Their sauerkraut is raw, unpasteurised, and still actively fermenting when it arrives, which is exactly how you know it is the genuine article.

The recipe is as minimal as it gets: organic cabbage, Celtic sea salt, and time. That is it. No vinegar, no preservatives, no shortcuts. The slow fermentation process produces natural vitamins C and K, along with potassium, calcium, and phosphorus — all present because the process was done properly, not because anything was added afterwards.

Because it is alive, it keeps fermenting at room temperature. Keep it refrigerated to slow that process down and preserve the flavour at the stage you like it.

How to use it: add it cold, not cooked. Heat destroys the live bacteria, so stir it into salads, pile it alongside a sausage, or — if you are feeling adventurous — blend a spoonful into a smoothie. The flavour is tangy and clean, and it works as a condiment as much as a side.
