Rooibos (pronounced roy-boss) is one of those ingredients with a genuinely narrow origin story: the Aspalathus linearis shrub grows only in the Cederberg Mountain region of the Western Cape, South Africa. That geographical specificity is part of what makes a good rooibos worth seeking out — and what separates it from the dusty teabag versions most people have encountered.
What Phuza does differently is in the cut. Most commercial rooibos is chopped fine to speed up infusion and standardise the process. Phuza's leaves are sun-dried, fermented, and then cut longer — which slows the infusion slightly but draws out a fuller, more complex flavour.
