A soothing, light, and balanced meal featuring flaky cod over silky, herb-infused orzo. This recipe is designed for ease and enjoyment, bringing together fresh flavours with the added benefit of Catalyse Acqua to elevate your dining experience.
Ingredients:
- 1 Fillet of cod (or Seabass)
- 2 Tsp of Olive oil
- Zest of 1/2 a lemon & juice
- Pinch of dried oregano
- Pinch of garlic granules
- 80g of Orzo
- 240ml of Vegetable stock
- 1 Tbsp of chopped parsley
- A splash of Catalyse Acqua - For extra zen
- Baby spinach or rocket
- A handful of sliced black olives
Preparation:
- Place the fish in a small dish, coat with olive oil, lemon juice & zest, oregano, garlic, salt & pepper.
- Add the orzo & stock to a small saucepan. Simmer for 8-10 minutes until soft - stir occasionally.
- Stir in the parsley, lemon juice, olive oil & salt. Fold in the green leaves until they wilt. Add in a splash of Acqua.
- Heat a non-stick pan on medium, cook the fish for 3-4 minutes on each side until flaky.
- Add orzo to a bowl, sprinkle over the sliced olives, place the fish on top & finish with parsley & a wedge of lemon.
- Serve with your Acqua & Enjoy!
