A light and aromatic citrus-led salad, the Aromatic Amalfi Chicken Salad is inspired by long, slow lunches on the Italian coast. It brings together the vibrant taste of blood orange with tender chicken and fresh herbs, creating a balanced and refreshing dish that's perfect for a relaxing meal.
Ingredients:
- Grilled or roast chicken
- Mixed leaves
- 1/2 Blood orange
- Feta
- Cucumber ribbons
- Shaved fennel
- Fresh mint & basil
- A handful of olives
- Pumpkin seeds
- A can of Acqua
Dressing:
- Juice from 1/2 a blood orange
- 1 Tbsp olive oil
- Pinch of sea salt
- Optional: Very lightly crushed juniper
Preparation:
- Mix together the dressing ingredients in a small bowl and set to one side.
- Layer the leaves, cucumber & fennel.
- Top with chicken, blood orange, feta, olives, seeds & herbs.
- Drizzle over the dressing.
- Toss together & serve with a can of Acqua.
