A bright and refreshing bowl, layered with clean, zesty ingredients, perfect for a mid-week, sensory boost.
Ingredients:
- 70g of Quinoa
- 180ml of Water
- 1 Tbsp of olive oil
- 1/2 a Courgette
- 1/2 a Red pepper
- 80g of Tofu
- A handful of mint
- Zest of half a lemon & juice
- Pinch of chilli flakes
- 1 Tbsp of roasted seeds
Preparation:
- Add the Quinoa, hot water & a pinch of salt to a pan. Simmer until fluffy - about 12 minutes.
- Heat 1/2 tbsp of olive oil in a pan. Add the chopped mint & lemon zest. Sizzle for 30-60 seconds until fragrant, set aside.
- In the same pan add the other 1/2 of olive oil, add the vegetables & tofu, season, add the chilli & fry until golden (6-8 minutes).
- Stir the toasted mint mixture & lemon juice through the quinoa. Top with the veggies & tofu, finish with roasted seeds.
