This recipe from Catalyse Life Drinks brings together fresh salmon with a vibrant juniper-citrus glaze and roasted vegetables for a dish that tastes like a golden hour evening.
Ingredients:
- 1 Salmon fillet
- 1 Can of Acqua (from Catalyse Life Drinks)
- 1 Small sweet potato, peeled and cut into circles
- 1 Small courgette, cut into half-moons
- 1 Tbsp of olive oil
- Zest & juice from half an orange
- 1 Tsp honey
- 1/2 Tsp of oregano
- A pinch of dried juniper (or rosemary)
- A handful of torn fresh basil
Preparation:
- Heat oven to 200 degrees Celsius. Lay sweet potato & courgette on a tray, drizzle with the olive oil, salt, pepper & oregano. Toss together and roast for 15 minutes.
- For the glaze, mix 2 tbsp of Acqua, the orange zest, juice, honey, olive oil, juniper (or rosemary), salt & pepper.
- Pull the tray out, make space in the centre, place your salmon fillet down & spoon half the glaze over the top.
- Return the tray & roast for 12-15 more minutes until everything is soft, flaky & caramelised.
- Serve with the remaining glaze, the basil & an Acqua over ice!
