This recipe is a wonderfully comforting and floral bake, perfect for a cosy evening. It uses Catalyse Relaxation Tea to infuse the sweet potatoes with a delicate chamomile flavour, creating a dish that's both delicious and soothing.
Ingredients:
- 1 Large sweet potato, cut into cubes
- 1 Tbsp of olive oil
- 1 Tsp of honey
- Catalyse Relaxation Tea (brewed)
- 1 Tsp of dijon mustard
- 1 Tsp of apple cider vinegar
- 1/2 Tsp of cinnamon (optional, but cosy)
- 1 Handful of chickpeas
- 80-100g of Crumbled feta
- 1/2 Pack of tenderstem broccoli
Preparation:
- Heat the oven to 200 degrees (fan).
- Brew the Catalyse Relaxation Tea into 50ml of boiling water.
- Mix the brewed tea with honey, olive oil, mustard, vinegar, salt, pepper, and cinnamon (if using).
- Toss the sweet potato and chickpeas in the glaze.
- Spread onto a tray and roast for 30 minutes, turning once halfway through.
- At this point, add the broccoli to the bake.
- After 30 minutes, scatter feta over the bake and bake for 5 more minutes.
- Serve with an Acqua over ice!
